Quinoa Salad
Quinoa Salad is such a delicious and refreshing salad full of veggies! Make this ahead and add to meal prep containers for a healthy lunch or dinner on the go.

INGREDIENTS:
- 2 c quinoa, cooked 
- 1 c chickpeas 
- 1/2 c cucumbers, diced 
- 1 c red & orange bell peppers, diced 
- 1 tsp jalapeños, diced 
- 2 avocados, diced 
- 1/3 c red onion, diced 
- juice of 1 lemon 
- 1 c arugula 
PREPARATION:
- Add all ingredients to a large bowl and mix together.
