Quinoa Salad is such a delicious and refreshing salad full of veggies! Make this ahead and add to meal prep containers for a healthy lunch or dinner on the go.

INGREDIENTS:

  • 2 c quinoa, cooked

  • 1 c chickpeas

  • 1/2 c cucumbers, diced

  • 1 c red & orange bell peppers, diced

  • 1 tsp jalapeños, diced

  • 2 avocados, diced

  • 1/3 c red onion, diced

  • juice of 1 lemon

  • 1 c arugula

PREPARATION:

  1. Add all ingredients to a large bowl and mix together.

  2. Add to meal prep containers and enjoy!!
