Chicken and Peppers
Looking for an easy and quick meal prep? This Chicken and Peppers recipe is super easy to prep. I added spaghetti squash to mine but rice or potatoes can be added, or simply eat just the chicken and peppers. Adding 1 cup of roasted spaghetti squash will add around 80 calories, 1 g of protein, 10 g of carbs, and 5 g of fat. This prep can be made in under 15 minutes and you will have preps for a few days. Enjoy!

INGREDIENTS:
- 6 red bell peppers 
- 1 lb ground chicken 
- 2 c fresh spinach 
- 1 c mozzarella cheese, shredded 
- 1 tbsp olive oil 
- salt and pepper to taste 
- 1/4 c water 
PREPARATION:
- Thinly slice peppers after washing and removing seeds. 
- Heat sauté pan on med-high heat. 
- Add olive oil to pan and let it get hot. 
- Add peppers and let cook for about 5 minutes. 
- Add ground chicken and cook another 3 minutes or until browned. 
- Add salt and pepper to taste then add water and let peppers simmer. 
- Add in spinach and cook until wilted then top with cheese. 
- Serve with spaghetti squash, rice, or eat just the chicken and peppers.
