Quinoa Veggie Bowl

Need a yummy vegetarian option for meal preps? This recipe for a Quinoa Veggie Bowl has roasted garbanzo beans, aka chickpeas, and kale with quinoa and will keep you full for hours. Just add garbanzo beans and kale to oven safe sheet pans and place in the oven for a quick meal prep. I like to have rice or quinoa already cooked in the fridge ready to use and this recipe is perfect for that!

INGREDIENTS

  • 2 cans garbanzo beans

  • 2 c kale

  • 1 c cherry tomatoes

  • 1 c quinoa, cooked

  • 1/2 c roasted red pepper hummus

  • 1 tsp chili powder

  • 1/2 tsp sea salt

  • coconut spray

PREPARATION

  1. Preheat oven to 425 F.

  2. Place garbanzo beans on a sheet pan and spray with coconut spray. Add seasonings and place in oven.

  3. Add kale to another sheet pan and roast both in oven for about 10 minutes.

  4. Divide quinoa among two meal prep containers and slice tomatoes.

  5. Once garbanzo beans and kale have cooked, evenly divide and add to containers.

  6. Top wth tomatoes and hummus.
