Pesto Rosso Gnocchi
Gnocchi is an Italy food and is a soft and pillowy potato dumpling. In this recipe, baking the gnocchi gives it a crispy outside that makes it even better! The pesto is a red based sauce and added with cream cheese gives the gnocchi a creamy, delicious addition. Enjoy this easy and comforting dish for dinner or make ahead for a quick meal prep.

INGREDIENTS
- 1 package gnocchi (Trader Joe's) 
- 1 package cherry tomatoes 
- 4 garlic cloves 
- 1 tbsp olive oil 
- 1 tsp dried basil 
- 1 tsp dried oregano 
- 1/2 tsp crushed red pepper flakes 
- 1 tsp pepper 
- 1 tsp dried thyme 
- 2 tbsp light cream cheese (softened to room temp) 
- 2 tbsp Pesto Rosso (Trader Joe's) 
PREPARATION
- Preheat oven to 425 F. 
- Add gnocchi, tomatoes, garlic, seasonings, and olive oil to sheet pan. 
- Cook in oven for 15 minutes. 
- Once all has cooked, spoon into a large bowl and add cream cheese and pesto rosso. 
- Top with extra basil and enjoy!
