Pasta Primavera
Pasta has always been one of my favorite foods to eat! This pasta primavera with chicken is super easy to make and tastes oh so yummy! Pastas are a great meal prep idea since you can make a lot and add to individual meal prep containers. This pasta primavera recipe is sure to keep you full throughout the day. Enjoy!!
INGREDIENTS
- 1 c shredded chicken breast 
- 1 squash, diced 
- 2 Roma tomatoes, diced 
- 3 radishes, sliced 
- 1 package Trader Joe's asparagus sauté 
- 1/2 box penne pasta 
- 1/2 jar Primal Kitchens garlic alfredo 
- 1/2 tsp dried basil & oregano 
- 1/4 tsp salt & pepper 
- 1/2 tsp olive oil 
- 1 lemon wedge 
PREPARATION
- Preheat oven to 425 F. 
- Spread vegetables and seasonings on a lined baking sheet. 
- Cook vegetables for about 20-25 minutes. 
- While vegetables are roasting, cook penne according to box directions, drain & rinse. 
- Toss penne, vegetables, chicken, and alfredo sauce in a large bowl. 
- Sprinkle with grated parmesan and a squeeze of lemon juice.
