Greek Egg White Breakfast Bake

Egg whites are a perfect way to get protein in your meals and what better way than with hash browns. This breakfast bake is not your normal boring eggs and cheese. It is full of Greek flavor from kalamata olives to zesty feta cheese. This breakfast meal prep is a time saver and you only use one baking dish. Prep this ahead and have an easy and full of flavor breakfast meal ready to go!

INGREDIENTS

  • 2 c liquid egg whites

  • 2 c shredded hash browns, frozen

  • 2 tsp kalamata olives, sliced

  • 1 tsp artichoke tapenade

  • 1/4 medium white onion, diced

  • 1/2 red bell pepper, diced

  • 1/2 c feta

  • 1 tsp oregano

  • 1/2 tsp sea salt

  • coconut spray

PREPARATION

  1. Preheat oven to 425 F.

  2. Spray oven safe baking dish with coconut spray.

  3. Mix all ingredients together in baking dish.

  4. Cook in oven around 20 minutes or until egg whites have cooked completely.

  5. Top with extra feta.
