Chorizo Chicken Stuffed Peppers

INGREDIENTS
- 1 lb ground chicken 
- 4 large bell peppers, cut in half and seeded 
- 1 can Rotel tomatoes 
- 1 c jasmine rice 
- 2 tbsp Cotija cheese 
- 1 tsp cayenne powder 
- 1 tsp garlic powder 
- 1 tsp ancho chili powder 
- 1 tsp chili powder 
- 1 tsp dried cilantro 
- 1 tsp paprika 
- 1 tsp salt 
- 1 tsp pepper 
- 1 tsp Mexican oregano 
- 1 bay leaf 
- 1 tbsp olive oil 
PREPARATION
- Preheat oven to 425 F. 
- Add all seasonings to ground chicken and let marinate for 15 minutes. 
- Preheat saute pan on medium-high heat and add olive oil. 
- Remove bay leaf from chicken and then add chicken to pan. 
- Let chicken cook until crispy, around 8 minutes. 
- Add Rotel tomatoes, rice, and 1 tbsp of Cotija cheese. 
- Stir together then spoon mixture evenly among peppers. 
- Bake in oven for 15 minutes, then top with remaining Cotija once cooked.
